This one is straight from France and boasts a slightly pungent, rusty orange washed rind surrounding a semi-firm milky interior. We love slicing this cheese thin and slipping it into our grilled cheeses. 100% raw cow milk.
A new funky fun blue cheese is Cabrales. A Spanish cheese prized for its powerful blue aroma and taste, Cabrales is made using raw milks from cow, sheep AND goat! It is aged in limestone mountains of northern Spain. If you are a blue cheese fan, we'd urge you to take a taste of Cabrales!
Quadrillo di Bufala is, yep you guessed it, made from pasteurized water buffalo milk! Another washed rind cheese, Quadrillo di Bufala is quite mild with subtle hints of the sweet, cream flavor of buffalo milk. This cheese hails from Italy and is a rectangular delight.
