Stop in to taste this week's Featured Cheese: Pleasant Ridge Reserve.
Pleasant Ridge Reserve is an Alpine style cheese made with raw cow’s milk by Uplands Cheese Company in Wisconsin. The cheese is only made from May to October when the cows are grazing on healthy pasture. The attention to milk quality and seasonality are apparent in this exceptional cheese. It is made in 10 lb rounds that are washed with brine as it ages which is a typical method of rind development for this style of cheese.
The cheese is semi-firm, supple and sports a thin rusty brown rind and contains the crunchy calcium lactate crystals that everyone seems to enjoy. Grassy, nutty, and fruity flavors mingle on the palate with no one taste dominating. This is a rich and complex cheese that pairs well with big reds like Cabernet Sauvignon or a full bodied stout.
