Samish Bay Cheese, located near Bellingham, makes a cheese so deliciously fresh it can be sold and eaten the day after it's made. Or, it can be aged 2-3 weeks which creates a soft rind with a creamy interior and enhances the fresh-from-the-cow flavor. After another week or so, it dries out and becomes suitable for grating! Ladysmith is an organic cow's milk fresh cheese made by Samish Bay.
In our cheese case this week, we have the aged version of Ladysmith. It has a light taste with a salty, milky finish-- a taste reminiscent of cheese curds!
We think Ladysmith would be perfectly suited for any recipe calling for mozzarella. As basil and tomatoes start appearing at the farmer's market, remember to cross the street to pick up your Ladysmith cheese.
